Blue C Sushi
GEOFF CARTER / NWSOURCE
At Blue C, the sushi is prepared and placed on a conveyor belt, where you can grab the plates at your leisure. It's not a revolutionary concept (such "Kaiten-sushi" establishments are common in Japan), but here in Seattle, it's different enough to have earned Blue C Sushi the top spot in this category. We suggest that you try the runners-up too: Shiro's, Yamashiro Sushi Bistro, Ototo and so on. Blue C is good, but if you're willing to forego the instant gratification, you can have great sushi.
