Bellevue is clearly grateful for the arrival of 0/8 Seafood Grill, the swank new hot spot that gave the Eastside a welcome reprieve from chain-restaurant overkill when it opened in the Hyatt Regency Bellevue last November. Seafood is the focus in both the 300-seat dining room, where live music plays five nights a week, and the adjoining Twisted Cork Wine Bar, with a small plates menu and twice-nightly happy hour. The cedar-planked salmon is perfectly grilled, and the sashimi scallops and the gnocchi sauced with crab and brie shouldn't be missed.
