West Seattle's Mashiko has again beat out Blue C Sushi's grab-it-before-it's-gone approach with innovation that doesn't require any special engineering. Instead, chef Hajime Sato serves up interesting dishes like scallop, crab and prosciutto, green-lipped mussels with dynamite sauce and fried freshwater-eel rolls coated in either walnuts or coconut.
